Motsunabe is a Japanese dish in which the small intestine of a cow is boiled in a pot. The Hakata district in central Fukuoka is considered to be the birthplace of Motsunabe. There are many coal mines in Kyushu, and there used to be many low-wage workers. It is said that the habit of eating cheap beef offal to strengthen them invented Motsunabe. Motsunabe has spread all over Japan and has become a popular national menu in the end of 20th century. Motsunabe is also popular with women because it is relatively low in calories and rich in collagen to make the skin beautiful.

The characteristic of Hakata's motsunabe, which is the birthplace, is boiled with Chinese chive and cabbage in soy sauce-flavored soup.
